So yesterday was day one of my attempt to go veggie for 7 days and on the whole it went rather well but for a lot of the day I found myself STARVING!!! which was probably down to the lack of protein and starchy/filling vegetables.
I started off the day with a bowl of Honey Nut Shredded Wheat Bitesize with 125ml of milk and a cup of tea. {166 calories} This will probably be my staple breakfast for the next few days as I am on early shift. Then mid-morning I grabbed a banana {105 calories} and an orange juice from the vending machine {57 calories}.
On Monday I already scoped out the lunch menu to see what the vegetarian options were and had a three course lunch! Starter was vegetable broth soup with a bread roll and flora{280 calories}. The broccoli and sesame seed fritata {109 calories} wasn’t up to much so I had two cream crackers with brie {228 calories} then topped off my meal with a wee pot of strawberry angel delight {89 calories}. I also had my obligatory cup of afternoon tea {15 calories – I’m trying my best to stick with no sugar!}.
Dinner ended up being 2 boiled eggs with toast soldiers (and a probiotic drink) {451 calories} after Caroline mentioned on Twitter that she had an excess amount of eggs due to generous neighbours. They were delicious and runny and amazing. Nom nom nom. I am however weird and only like the yolk of an egg when it is hot but not liking waste saved the egg whites as a snack for after my first aid class. (Which I’m happy to say I passed with flying colours but will save blogging about until I receive my certificate in the post!)
Total for the day came in at 1520 calories so just a teeny insignificant 20 over goal. Hopefully the rest of the week will go as easy as yesterday (although I’m missing chicken and tuna already!!!) and I hope to post at least one veggie recipe for you all that I have tried!
