I found myself at a bit of a loose end on Sunday after a friend had to cancel our lunch plans. Not one to spend my day doing nothing I decided, with the help of my niece, to set to work on a 101 list item and make Millionaires Shortbread for the first time. But before we could get started we had to pop to the shop first to stock up on the ingredients. For those interested, I was (roughly) following this BBC Good Food recipe!

After reading some of the comments I decided to only use one can of condensed milk for the caramel which means I only need to buy butter and chocolate if I decide to make another batch!

To start off my niece helped me make the shortbread by rubbing together the flour, caster sugar and butter. She did really well for the most part but we both struggled to get it ‘doughy’. In the end I ended up just pushing it into the container. It came out of the oven looking golden delicious though!

I let it cool down and then after my niece left to spend the night at her mums I set to work at making the caramel. This is the bit that I’ve always been too scared to do that has stopped me making millionaires shortbread in the past and I found it every bit as difficult as I thought it would be. After dumping all the ingredients in the pan and stirring furiously I just could not get it to boil and I really wasn’t sure how thick it should be. After some intervention from mum it started to come together and despite a few burnt bits it was still yummy!

The last layer was of course chocolate and since I only had 100g of cooking chocolate left I mixed it together with some Galaxy Counters before melting (waste not want not!) and spreading generously on top

I am so, so pleased with how they turned out and with a few more tries at making the caramel I’m sure I’ll be a pro at it in no time!
